Travel and restaurants

From the spiritual to the silver screen

Rich in heritage, Paradores are also a resounding tribute to the wonders of present-day Spain. While many castles, convents and monasteries have been modernised as accommodations with restaurants and conference spaces, the Paradores collection also includes new edifices that embellish this forward-facing vision.

Local ingredients are infused into menus by the new vanguard of Spanish chefs, while sustainability strategies revitalise surrounding areas and remind visitors to respect delicate ecosystems. This comes alive through the “Nature for the Senses” programme, an alliance of companies to promote ecotourism and ensure that communities thrive. Through art, design, food and visionary plans for the future, each Parador gives guests a compelling portrait of modern Spain.

1.
Parador de Corias
Asturias

Despite being a millennium old, San Juan Bautista monastery’s story is still unfolding. Now a hotel, guests have a unique opportunity to mix with the former tenants; a community of Dominican acolytes who manage the adjoining church. With views of the Narcea river, the monumental architecture has seen the building compared to El Escorial, an ecclesiastical complex that once aspired to be the capital of the Catholic world. Parador de Corias’s guests are nourished by a calming spa, extensive library and impressive art collection that includes archaeological remnants reworked into the interiors.

2.
Parador de Molina de Aragón
Guadalajara

Mixing modern architecture with medieval views, this Parador is a testament to the transformative power of Spain’s national treasures. Recently inaugurated, it was envisaged as a locus of economic and social regeneration for the remote area. Sat opposite the Molina de Aragón Castle, guests can marvel at the 12th-century walled fortress from afar while enjoying more contemporary facilities, including a popular restaurant and generously-sized event spaces. This Parador offers a vibrant juxtaposition between Spain’s past achievements and future ambitions.

3.
Parador de Mojácar
Almería

The dramatic coastlines and vistas of the Almería region have served as the backdrops for countless films and TV productions, from Sergio Leone’s “Dollars” trilogy to Indiana Jones and the Last Crusade and Game of Thrones. In the picturesque town of Mojácar, this Parador places guests centre stage in a timeless story of their own, one that speaks to the ongoing allure of nature. The nearby beach, Sierra de Cabrera mountains and Mars-like terrain of Cabo de Gata Natural Park are all a stone’s throw from the hotel. Active days of hiking, surfing or sailing can be balanced by more serene moments spent by the pool that overlooks the sea.
