Paramount House Hotel, Surry Hills 
In 2018 the former headquarters for Paramount Pictures Studios transformed into boutique hotel Paramount House. The loft-like rooms are filled with plants and soft furnishings, while plenty of natural light filters through. Its rooftop bakery AP House, café Paramount Coffee Project and wine bar Poly are well worth seeking out, even if you’re staying elsewhere.
