To compile our 50 ways to hit play in 2021, we sent our correspondents all over the world. But the simple joy of pulling up a chair in a favoured bar or restaurant is universal. Our Hong Kong bureau chief James Chambers was able to do just that at Carlyle & Co, where he kicked back with a martini.
