The Dylan, Nine Streets
Hidden behind a 17th-century archway on the Keizersgracht, The Dylan’s 41 guest rooms – grouped in four distinct styles (Loxura, Amber, Serendipity, Loft) – combine bare timber beams with a monochrome design by Anouska Hempel and Studio Linse. Its two-Michelin-star modern French restaurant, Vinkeles, occupies a bakehouse from 1787 which still has the original ovens in the wall.

Rosewood Amsterdam, Leidseplein 
Spread across an expansive building on Prinsengracht, the striking Rosewood Amsterdam – which once housed an orphanage and then a courthouse – has been reworked by Studio Piet Boon with coffered ceilings, velvety nooks and a palette of bronzes, greys and blues. The courtyard garden was conceptualised by renowned Dutch garden designer Piet Oudolf. Searching for drinks and dinner options? Look no further than The Advocatuur bar and Eeuwen restaurant.

Mandarin Oriental Conservatorium, Oud-Zuid
Piero Lissoni transformed a 19th-century music conservatory into this premium stay. His signature glass atrium illuminates century-old stone that sits alongside travertine and darkwood. It’s here that Yotam Ottolenghi opened his first Dutch restaurant in early 2026, serving a vegetable-led menu inspired by his London-based Rovi. After a day of cruising the canals, unwind with Akasha Wellbeing’s flagship treatment: a full-body massage that combines hot stones with deep-tissue techniques and aromatherapy work.


Pillows Grand Boutique Hotel Maurits at the Park, Oost
An elegant 1908 university building – complete with a brick façade, sweeping staircases and arched windows overlooking Oosterpark – has been converted into this 88-room boutique hotel. The rooms, dressed in muted tones, feature custom-made beds and Diptyque toiletries. Or you could plump for the Pillows Grand Suite, furnished with a grand piano and marble soaking tub. Head to the rooftop for an aperitif or to the guests-only lounge, Living, then try the vegetable-forward European menu at Van Oost.
